abstract = {The high content of fructooligosaccharides production from
sucrose using fructosyltransferase from aureobasidium pullulans was investigated
in the laboratory by using immobilizing technique. The FOS production was obtained
using both extracellular and intracellular enzyme from Aureobasidium pullulans.
Optimum conditions for enzyme production and enzyme reaction have been determined.}
